Popovers

A traditional favorite of the Rowe clan.......

 

 

2 1/2 cups milk

2 1/2 cups flour

1 tsp salt

6 large eggs

 

Preheat oven to 425 degrees. Generously grease popover pans.  Pour milk into large mixing bowl.  Add flour and salt.  With wire whisk beat until well blended (do not over beat).  Add eggs one at a time, beating well after each addition.  Pour batter into pans about 3/4 full.  Bake at 425 degrees for 20 minutes, then reduce heat to 325 degrees and continue baking for 15-20 minutes.  (If you want a drier inside to the popover, poke with a fork just prior to the 325 degree baking period). Note:  if popovers do not rise properly, set oven temperature 25 degrees higher.  Serve with butter, honey or jam.
